SST는 단일 전전구단백질(preproprotein)을 암호화하며, 이 단백질이 대체 절단되어 활성형 14 aa 및 28 aa 형태의 소마토스타틴(somatostatin)이 생성된다. 소마토스타틴은 전신에서 발현되어 고친화성 G 단백질 결합 수용체(G-protein-coupled receptor)에 결합함으로써 여러 이차 호르몬의 분비를 억제하며, 뇌하수체 성장호르몬·갑상샘자극호르몬(thyroid stimulating hormone)을 비롯한 위장관 호르몬 대부분과 상호작용해 내분비계를 조절한다. 또한 중추신경계의 신경전달 속도와 정상 세포 및 종양 세포의 증식에도 영향을 미친다.
